Parsley fritters

Arabic egg and parsley fritters

Very tasty little parsley fritters. I make them in a special pan I inherited from my mother, but a small skillet or one large omelet works too.

Special ingredients: Allspice Amazon, Dried mint Amazon

Video in Spanish on my YouTube channel.

Ingredients

As I list them in the video description.

  • About 120 g parsley, finely chopped
  • 1 medium onion, finely chopped
  • 5 eggs
  • ½ tsp allspice
  • 1 tsp Arabic chili (optional)
  • 1 tbsp dried mint or about 25 g fresh
  • 1 tsp salt (adjust)
  • 1 tsp crushed garlic

How it's made, in short

  1. Wash the parsley and dry it very well on a towel.
  2. Chop the parsley and onion finely.
  3. Mix with the garlic, allspice, mint, chili and salt.
  4. Add the eggs one at a time until the mixture is neither too runny nor too thick.
  5. Fry by the spoonful in a little oil over medium-high heat, flip, and drain on paper towels.
