Labneh
Strained yogurt balls
Labneh, or laban, means yogurt in Arabic. Here I make it dry, rolled into balls, with a texture similar to ricotta. It is delicious with za'atar, olives, tomato and pita.

Ingredients
As I list them in the video description.
- 2 kg plain yogurt
- Salt (optional)
- Olive oil or your oil of choice
- Sterilized jars
How it's made, in short
- Place the yogurt in a cloth over a strainer with a bowl underneath so the whey drains.
- Stir it every three or four hours; in about 24 hours it should be dry, like a block of ricotta.
- Roll it into balls and leave them a few hours on paper towels, covered with tulle.
- When there is no moisture left, pack them in sterilized jars and cover with oil.
